A few months ago, I discovered the delicious wonder that is a pizza crust made out of cauliflower. Now, I love cauliflower but a pizza crust made from it? I was a bit hesitant to try this out, not wanting to waste perfect good ingredients to make something that I wouldn’t like. I took a chance and now I am a huge fan of this pizza crust. It’s delicious, guilt-free and an easy way to incorporate veggies in your diet if that’s an issue. The best part is that it uses only a few ingredients and it’s fairly simple to make. Try it!
Cauliflower pizza crust
1 cup skim mozzarella cheese, shredded
spices and herbs to taste (I used powdered garlic, dried basil, Italian seasoning)
Preheat the oven to 450 degrees.
Cook the cauliflower until tender, be sure to not overcook. Chop the cauliflower until it’s just little chunks. Set aside.
In a large bowl, beat 2 eggs. Add the cheese and the seasonings. Put the slightly cooled cauliflower in cheesecloth, squeezing out excess liquid. You’ll likely need to do this step a few times to result in the crispiest final product. Mix the cauliflower in with the rest of the ingredients, making sure to mix really well.
Line a baking pan with parchment and press in the mixture, spreading evenly.
Bake for about 20 minutes.
And… ta da! You have a blank canvas to top with your favorite pizza toppings. I topped mine with cheese, Canadian bacon and pineapple to make it Hawaiian style! Enjoy!
